This Coconut Dream smoothie will keep you going for the long haul, great for a breakfast on the go or as the base of a beautiful smoothie bowl.

Yield: 1 serving (16 oz)
¼ cup macadamia nuts, soaked overnight
1 cup young Thai coconut meat*
½ cup pineapple chunks
¼ cup lychee, canned or fresh (peeled and seeded)
1 banana, peeled and sliced
6 ounces nut milk (almond, hemp, rice, etc.)
3 teaspoons Natural Vitality’s CALM Plus Calcium (unflavored)
2 teaspoons honey
*Young Thai coconut meat is often available in the freezer section, already cleaned and puréed. Or you can buy a young green coconut and scoop out the meat from the inside yourself—one coconut generally offers about ½ cup of coconut meat.
Place all ingredients into your blender and purée until smooth. You may want to add extra nut milk or ice for a more liquid consistency.
